This unit is a study of the principles and practices of Wine clarificationand stabilisation and the role of protein, tartrate, metal, colour oxidative and microbiological stability and stability testing in wine production. Wine clarification methods studied include settling, centrifugation, filtration and fining.

The most recent round of testing indicates that its Wine clarification product again yields extractable metal contents well below and current European limits. This latest round of testing included extraction protocols from the governing regulatory body of the European wine industry called the Office International de la Vigne et du Vin (O.I.V.) based in France.
